What's so cool about this meal is that you can eat that yummy diner taste to breakfast or throw it into a burrito for on the go eating.  Breakfast for two is done in 15 minutes!

Step 1: Ingredients

- 2 large eggs
- About 5 slices of ham/turkey/cooked bacon/or cooked sausage (Any meat available or omit).
- Half a large potato
- Vegetable/Canola oil
- Seasoned salt
- Pepper

nicely done "ible" and thank you for making my stomach want eggs this morning !! (none in frig ) I like my scrambled eggs or omlets real fluffy like those at Waffle House or some other restaurants that use a milkshake mixer to beat the eggs, an imersion or stick blender works great. I crack 2-3 eggs in a large glass, add a teaspoon of water for ea. egg and a dash or 5 of hot sauce, the imersion blender can whip enough air in to the mixture to overflow the glass ! I like a combination of butter and left over bacon grease to cook the eggs in. Again, thank you for the craving... I think Im off to Waffle House for brkfast !

Oooh, Waffle House is very tasty! If I want my eggs fluffy to the max, I add a splash of milk and since an immersion blender is on my list of "stuff to buy," I beat the hell out of my eggs with my mommy arms! Thanks for the reply!

Try the same idea with leftover steak, mushrooms, onion, and bell pepper (I'd omit the ham- 1 meat is enough). That's my favorite variation. I can remember my dad making it for me when I was little and me thinking he was a genius for it!

Yes! The ideas keep coming! I wanted this ible to be a starting point to delicious flavor combinations. Once you know how to make the base recipe, you can alter it to your liking. If I had done a little more shopping, I would have added peppers, mushrooms, jalapenos, cubed black forest ham and then topped the dish with avocado slices....okay, off to make breakfast!!

I keep the onions sweet bell peppers red green and yello and jalepenos peppers all in freezer bag ready to go. I cook the potatoes either after grating or dicing them and use vegitable oil i have used saflower oil but oilive oil will burn also certain russel potatoes like to stick to the pan mom says its the gluton or something like that. try cooking bacon wrapped in three layers of paper towel. check after two minutes as some thinner bacon slices will be done. breakfast just is the best meal after digesting all the food from day before you just need a refill

Always a good idea to keep diced veggies on hand! Some potatoes can be uber-starchy and yeah I hate it when it sticks. Yup, olive oil has a low smoke point and is usually good for a sauté style meal. You can never go wrong with bacon on anything, plus who doesn't love a good breakfast?
