Introduction: Torta Di Mandorla (Almond Olive Oil Cake)

Buongiorno a tutti! Welcome everyone and thanks for stopping by! In a couple minutes, I will show you how to make a Torta di Mandorla which is Italian for Almond Olive Oil cake. There will be step by step pictures and simple instructions to make this delicious plate. Well what are we waiting for? Andiamo!

Step 1: Ingredienti

The ingredients you will be needing are:
1 cup all-purpose flour;
1/2 cup almond flour (blanched or naturel);
1 1/2 tsp of baking powder;
1 tsp of salt;
3 eggs;
3/4 granulated sugar;
1/2 cup + 1 tbsp extra-virgin olive oil;
1/2 tsp pure vanilla extract;
1/4 tsp pure almond extract;
Grated zest of 1 lemon.

At the end, there is an optional glaze for the cake to which the ingredients are:

2 tbsp unsalted butter;
1 cup confectioner's butter;
3 tbsp of milk;
Few drops of lemon juice;
1/2 cup sliced, blanched almonds, toasted and cooled;

Step 2:

Preheat the oven to 350 F and grease a 9-inch round cake pan and set aside In a medium bowl, whisk together the flour, almond flour, baking powder and salt. When finished, set the bowl aside.

Step 3:

Crack the eggs into a large bowl and whisk them lightly.

Step 4:

Add the sugar to the bowl and whisk it thoroughly.

Step 5:

Add the olive oil until the mixture is a bit lighter color and has thickened slightly. Mix in the extracts and lemon zest.

Step 6:

Add the dry ingredients and mix until they are combined and continue mixing until you have a smooth batter.

Step 7:

Pour the batter into the pan and bake it for 35 minutes.

Step 8:

When done, allow the cake to cool for ten minutes then gently remove it from the pan. While the cake cools, make the glaze. Mix all the ingredients together until it has thicken and becomes creamy.

Step 9:
