Triple Threat Cookies - A trio of cocoa, mint & white chocolate chips!

Let me introduce you to potentially, my new favorite cookie. I call it the Triple Threat. It is a trio of cocoa, mint & white chocolate chips! They are big, soft, chewy cookies that will make your evening bright and put a smile on your face. Perfect for any occasion really, these bad boys have some real flavor to them! The mint for your sense of smell, the white chocolate for that smooth chocolate taste, but a nice big dark cookie that looks like its fresh from a bakery for your eyes to feast on! What more could you want?

Triple Threat Cookies - A trio of cocoa, mint & white chocolate chips!
  • 1 tsp. mint extract
  • 1 package (12 ounces) white chocolate chips
  • 2 tbsp. melted and cooled chocolate. Can use milk, but dark adds to the flavor!
  • 3/4 cup sugar (granulated white)
  • 3/4 cup brown sugar (packed)
  • 2 eggs
  • 2 cups flour
  • 1 tsp. baking soda
  • 2 sticks (1 Cup) butter at room temperature
  • 1/4 cup dark cocoa powder (Hershey’s is my favorite brand to use!)

Preheat the oven to 375 degrees and prep baking sheets with butter or nonstick spray. In a mixing bowl, combine sugar and butter until mixed thoroughly. Beat in the eggs one at a time.

In a separate bowl, combine the flour, baking soda, and cocoa powder.

Add the flour mixture into the liquids bowl, then mix in the mint extract and cooled chocolate.

Stir in the white chocolate chips. Be careful not to over mix. As long as they are fairly mixed, you should be ok. You do NOT want to overwork the batter!

Scoop heaping teaspoons on the prepared cookie sheet. Spraying a nonstick spoon works wonders. Try not to snack as you go!
Bake 8-10 minutes but then let the cookies rest on the sheet a few additional minutes after taking out of the oven. Then transfer them over to a wire rack to set. 

This particular recipe will make at a minimum, 2 dozen, but up to about 3 dozen cookies, depending on how much dough you eat and how big your cookies are!
