500g turkey mince
1 tbsp chipotle sauce
1tsp dijon mustard
500g pasta shells
1 quantity (400g) tomato pasta sauce (from a previous instructable)
Step 1: Step 1
Brown off the mince in a large saucepan.
Meanwhile, boil the pasta in a large saucepan of boiling water
Add chipotle sauce to the mince, then sweetcorn (you can use other veggies- peppers, mushrooms etc)
Stir in the pasta sauce and simmer while the pasta cooks.
Step 2: Cheese Sauce
On a low heat, warm up the marscapone in a medium pan, add a ladle of pasta water.
Add about 2/3rds of the grated cheddar.
Add mustard and season with salt and pepper.
Keep stirring until the sauce is smooth
Step 3: Build the Bake
Pour the mince into a large shallow dish.
Drain the pasta.
Pour the cheese sauce over the pasta and mix well.
Layer the cheesy pasta on top of the mince.
Top with the remaining cheddar cheese, and parmesan if you wish.
Bake for 30 minutes at 180 degrees until bubbling and golden.
Cool slightly before serving.
