Introduction: Turkey Pizza With Cranberry Sauce

What do you do with that last little bit of Christmas Turkey, not enough to make a hot turkey sandwich, and it is cold outside so you want something warm and soothing.

I had planned to make omelettes for supper and use up the last of the turkey. My husband said - what about Turkey Pizza - I thought he was crazy, but I'm always game to try something new and different.

Step 1: Making the Pizza Dough

I make my pizza dough in my bread maker on the dough setting.  I started making homemade pizza 8 months ago, and have not bought a pizzeria pizza since.  I like the home made one way too much.

This is the recipe for the dough.

3 1/2 cups unbleached bread flour
1 cup warm water
2 tablespoons honey
1/4 cup olive oil
1/2 tsp salt
2 1/2 tsp bread machine yeast.

Put the water, honey, olive oil and salt in the  bread maker first.  Put in the flour, poke a little well in the flour, and add the yeast.

Turn  the breadmaker  on to the dough setting  - mine takes 1 1/2 hours.

Step 2: Gathering the Ingredients

The dough recipe makes 2 - 12" pizza's

For each pizza

2 cups of Stretchy  low moisture mozzarella ( I use Kraft extra Stretchy)
1/2 cup pasta sauce - any flavour or brand you prefer
corn meal for the pizza stone
Olive oil to brush the dough.
Toppings for the pizza's

Turkey - chopped and shredded - 1/2 cup per pizza
black olives sliced - 1/4 cup per pizza
red and green peppers chopped - 1/2 cup per pizza
mushrooms sliced - 1 cup per pizza
Hot peppers - if you like - about 1/8 cup per pizza ( I put them on 1/2 the pizza for my husband).

Step 3: Making the Pizza

When  the dough is finished let it sit in the bread maker for 10 minutes then turn out onto a floured surface.

The dough needs to sit for another 20 minutes before making your pizzas.  Brush olive oil on the inside of a bowl large enough to cover the dough, and let rest for 20 minutes.

While dough is resting  prepare the toppings.

Turn the oven on to 450 degrees, when the oven has preheated for 10 minutes put your pizza stone into the oven to warm.

Make sure the pizza stone is not in the oven any longer than 10 minutes, otherwise while your are putting your toppings on the dough the pizza will start cooking on the bottom.

Step 4: Working the Dough

After the dough has finished resting, divide in two, put the second half back in the bowl.

Place the first half of the dough on your floured surface and press into a circle with our hands.  Once you have a circle lift up and let the dough stretch in length, place back on the floured surface and roll out the dough to the desired size (rolling pin).

Step 5: Building the Pizza

Take the pizza stone out of the oven, sprinkle with corn meal (this keeps the dough from sticking to the pizza stone)

Brush 1 tablespoon olive on the surface of the pizza dough, then spread the pasta sauce.

Next add the 2 cups cheese - make sure to spread evenly.

Next add the shredded turkey.

Next add the sliced mushrooms, then the chopped peppers, black olives and hot peppers.

Step 6: Baking the Pizza

Place pizza in the oven, put timer on for 12 minutes.

The crust should be lightly browned on the edges, and cheese melted.

Remove from oven, let rest for 5 minutes before slicing.

Step 7: Yumm, Turkey Pizza Just Add Cranberry Sauce

Pizza was really yummy, turkey just melded with the cheese................... cranberry sauce added just the right zing to it.

So good, have to make the second one.

While someone is finishing the last piece, wipe off the pizza stone and put  it in the oven for 5 minutes to warm it .  Roll out the second half of the dough,  and make the pizza the same as the first one.

Step 8: Good to the Last Bite

All that is left of the first pizza....................
