Twice baked potatoes are a delicious side-dish to any meal.  Theyre simple to make, all it takes is a little time and some basic ingredients that should be available at any local grocery store.

 

Ingredients:

-2 Russert Baking Potatoes (about 1 lb. each)

-Olive Oil

-Garlic Salt

-4 Strips of Bacon

-1 Cup of Shredded Cheddar Cheese

-3/4 Cup of Sour Cream

-1/2 Cup Milk


Materials

-Oven

-Range

-Baking/Broiling Pan

-Skillet

-Plates, Bowls and Silverware

-Paper Towels

Step 1: Prepare the Potatoes for Baking


In this step you will be preparing the potatoes for baking.  This step not only ensures the potatoes are clean and safe to cook and eat, but also adds to the flavor and texture of the potatoes. 

Ingredients needed for this step: Olive Oil, Garlic Salt


The first thing you want to do is give the potatoes a thorough cleaning under running water.  Use your hands (or a scrub brush if you have one) to wash off any dirt or anything else that should not be there.  When you are finished, dry the potatoes and place them on a plate.

Next, drizzle olive oil over the potatoes, not much olive oil is needed as a little bit goes a long way.  Using your fingers, spread the oil all over the potatoes so they are completely coated.  The olive oil helps make the skins of the potatoes crispy and delicious.

After the potatoes are completely cover in olive oil, sprikle a dash of garlic salt on each potato.  As with the olive oil, a little bit goes a long way so you dont need much.  Use your fingers to spread the garlic salt around so it is evenly distributed over the potatoes. 

Finally, poke holes in the potatoes using a fork.  This step is very important because if the potatoes to not have holes to vent the heat they will explode in the oven.  Poke each potato about 3 times.

These were really great! The crispy skin was like a fun tasty bowl. We skipped bacon but maybe turkey bacon next time. Looking forward to mixing up different things for these. Thanks for sharing.

Excellent recipe - a new favorite. Tried it a few times, and they turn out perfectly. I like to mix in a couple of chopped green onions, too.

Save some time by doing the first cooking in the microwave for about 8minutes or till done.  If they feel soft by gently squeezing thesides, they are done!  Then cut in half, scoop out the center andcombine with sour cream and or other favorite "Mashed Potato"ingredients.  Refill the potato skin halves, top with cheese andbacon bits, and place under the broiler until browned and cheese ismelted. Doesn't take long under the broiler, so watch!! Only about 3-4 minutes.
