Introduction: Twisted Chicken Nachos

Who doesn't love nachos?!? But cheese and chips are only a small portion of the endless possibilities. Hi! I'm Maverick12; lover of crafts, wine, and food. These are chips I whipped up for a party a while back and they are fantastic. Please enjoy!

Step 1: Marinate the Chicken

First things first, get the chicken marinating!

I'm using (1) chicken breast cut in half length wise.

Ingredients for the marinade:

(2) tablespoons of parsley flakes

(2) teaspoons cilantro

a dash of black pepper

(2) teaspoons garlic

(1) teaspoon onion powder

(3) tablespoons olive oil

(1) tablespoon lemon juice or lime juice (your choice)

Combine all dry ingredients into a ziploc bag.

Then add the liquid ingredients.

Place the two pieces of chicken (make sure they are defrosted) into the bag.

Squeeze the air out of the bag and seal.

Shake smash and squish the bag to get the marinade everywhere.

Place in the fridge for a minimum of one hour.

Step 2: Prepare a Few Peppers

Next up pick a few peppers that you like. I picked a green pepper and a white pepper from my garden.

Dice into small pieces.

Side note: Feel free to add tomatoes as well! For some reason the hubby won't eat raw/sauted tomatoes... only pasta sauce...

Step 3: After the Chicken Marinades....

After an hour in the fridge, pull the chicken out.

Dice into small pieces.

On the stove, add a tablespoon of olive oil and preheat a pan.

Over medium high heat, begin cooking the chicken.

When the chicken is almost done add the diced peppers and saute. Chicken turns white when cooked. To ensure thorough cooking, use a meat thermometer.

Step 4: From the Stove to the Table

Pick a can of your favorite nacho cheese. This happens to be mine. It's the closest I've come to finding a nacho cheese similar to a movie theatre....

Open the can and place half into a microwaveable bowl. Heat for approximately 1 min 30 secs.

In a large bowl, place some tortilla chips.

Pour the heated cheese over the chips.

Add the chicken and peppers.

To top it all off put a dollup of sour cream on top and you are ready to serve.
