Step 1: Cookie Dough

170g / 3/4 Cup Margarine

100g / 1/2 Cup Granulated Sugar

100g / 1/2 Cup Light Brown Sugar

1 Large Egg

2tsp Vanilla Extract

280g / 2 & 1/4 Cups Plain Flour

1/2tsp Salt

2tsp Baking Powder

120g / 1 Cup Milk Chocolate

40g / 3/4 Mini Marshmallows

Beat the margarine in a bowl or stand mixer. Add in the sugar followed by the egg and vanilla. Mix the flour, salt and baking powder together and pour into the mixture and beat until combined. Chop the milk chocolate into small chunks and add to the mixture along with the mini marshmallows. Bring the dough together and wrap in cling film. Chill in the fridge for 1 hour to allow the dough to slightly harden. Once chilled, roll the dough into small balls and place on a baking tray lined with parchment paper. Bake at 175 degrees celsius for 10-12 minutes.

Step 2: Toppings

120g / 1 Cup Milk Chocolate

4-5 Digestive Biscuits (or Graham Crackers)

Mini Marshmallows

Marshmallow Fluff

While cooling, place a few mini marshmallows on top of the cookies. Once completely cooled, melt the chocolate and dip in half of each cookie. Place the cookies on some greaseproof paper and sprinkle on some crushed Digestive biscuits(Graham Crackers). Once dry, flip the cookies over and spread the reaming chocolate and marshmallow fluff on the bottom of each cookie and sandwich together.
