Introduction: Vegan Cookie Platter

I have these two cookie books that my husband got me some months ago. The pictures inside tempted me to veganize them, and since Christmas is almost here, thought I'd give them a try and they turned out awesome, all thanks to bean water (aquafaba). All these cookies are either using red kidney bean aquafaba or white kidney bean aquafaba ^_^

As I am in Canada, our sugars are mostly vegan, but I use Redpath as a trusted brand.

For chocolate chips, you can use Enjoy Life, available at Safeway, but they are not cheap. As an alternative, you can use the semi-sweet chocolate chips, no brand ones, but do check the package as some of them do contain milk in it. I know that President's Choice and Great Value only may contain milk but do not list milk in their ingredients.

For the Christmas Tree Cookies, you can use Sour Patch Kids (altho it's not so easy to find when Halloween is over)

These cookies are to be packed in cute boxes and send to our local hospital, which we do annually, for commemorating our son's birth (right on Christmas day!). So excited, as this will be our first vegan hampers!

Step 1: Jeweled Christmas Tree Cookies

You can hang these cookies on your tree. They would make awesome ornaments :)

1 1/2 c flour
1/3 c shortening

3 tbsp sugar

1 aquafaba egg

2 1/2 tbsp lemon juice

Crushed candies/chopped gummies

Mix flour and shortening until crumbly texture

Add in the rest, knead the soft dough

Roll flat and cut with cookie cutter

Punch holes all over and a small one on the tip of the tree (if you'd like them as tree ornaments)

Place cookies on sheet that is lined with parchment

Fill the holes (not the one on the tip of the tree) with crushed candies

Preheat oven 350 F, bake for 15-20 mins, cool on sheet

Tie a ibbon over the small hole if they are for ornaments!

Step 2: Linzer Cookies

You can punch hole, shaped cutter, or you can even roll flat instead shaping them into logs, then cut with flower/linzer cutter. I uploaded three pictures to show the variety you can make for linzer cookies ^_^

3/4 c shortening, room temperature

2/3 c sugar

2 aquafaba eggs

1 tsp vanilla essence

A drop or two of orange oil

1 1/2 c walnut meal (ground walnut)

2 c flour Icing sugar for sprinkling

Strawberry jam (or whatever flavor)

Beat the first 5 ingredients then beat in the rest til combined

Divide dough into 2 equal portions and shape them into logs

Wrap and chill overnight

Preheat oven 325 f, grease baking sheets

Slice one log into portions

Slice the other log, and punch round or flower shape on the center

Bake 10 mins, let stand on sheet for 1-2 mins, then move cookies to parchment or wax paper until cool completely

Sprinkle icing sugar on punched cookies, and spread jam on the regular cookies, then sandwich the two cookies

Step 3: Chocolate Pretzels

1 c flour

A pinch or two of salt

3 tbsp cocoa powder (I ran out my no brand cocoa and added Hershey's - I learned my no brand has darker cocoa, shown on picture)

1/2 c shortening

2/3 c sugar

2 aquafaba eggs

1 aquafaba egg for brushing

Sugar crystals for sprinkling

Cream shortening and sugar, then beat in aquafaba

Stir in dry ingredients

Form into a ball, wrap and freeze for half hour

Take out from freezer and divide into 28 balls (flour your hand if it gets too sticky). Chill balls for 15 mins

Preheat oven 375 and grease baking sheet

Take out balls and shape into ropes, then turn ropes into pretzels

Brush with aquafaba and sprinkle with sugar crystal

Bake until firm (about 12 mins) and cool on rack

Step 4: Crackle-top Molasses Cookies

We had a little accident while making these cookies. At first my almost 2 yo son didn't really pay attention to what his 6 yo brother, which was having fun, helping. Once he realized that, he took over the bowl of sugar and dump it on the table, and said FUN hahaha So naughty.

2/3 c oil

1 c sugar

2 aquafaba eggs

2 tbsp molasses

2 c flour

2 tsp BSoda

1 tsp cinnamon powder

1 tsp ginger powder

1/3 c sugar, for rolling

Combine oil and sugar, then beat in aquafaba.

Stir in the rest of the ingredients

Shape into balls and roll in sugar

Preheat oven 350f, bake for 12-14 mins, top will crack

Cool on rack

Step 5: Tollhouse Cookies

I won't know which one is the original Tollhouse cookies as different books would list different recipe. About 3 books of mine use walnut as ingredients, the other 2 don't. So please don't shoot me ;-)

1/2 c shortening

1/4 c sugar

1/2 c coconut palm sugar

1 flax egg

1 aquafaba egg

1 tsp vanilla essence

1 1/8 c flour

A pinch or two salt

1/2 tsp BSoda

1/2 c walnuts, chopped

1 c semi sweet chocolate chip

Cream shortening and sugars

Beat in flax, aquafaba and vanilla

Blend dry ingredients then stir into shortening mixture

Combine choc chips and walnut, then mix into dough

Preheat oven to 350 f

Grease baking sheet

Drop dough by tbsp and bake for 10-15 mins

Cool on rack

Step 6: Snickerdoodle Cookies

Coating: 2 tbsp sugar + 1 1/2 tsp cinnamon powder (I used the leftover sugar, after rolling molasses cookies -previous post!)


1 c shortening

1 1/3 c sugar

2 aquafaba eggs

3 c flour

1 1/2 tsp cream of tartar

1 tsp BSoda

A pinch or two salt

Beat the first 3 ingredients until fluffy then beat in the rest til combined.

Shape into balls and roll in coating

Bake on ungreased sheet for 10 mins in preheated oven at 375 F

Cool on rack

Cool! Just a reminder that most of the gummies are not vegan cuz they contain glatin. If you want to make vegan version make sure you use those use pectin or starch instead of gelatin.

It's on the first page description, use Sour Patch Kids ^_^ They should be vegan, per PETA site.
