Vegan Creamy Cannellini Bean Burrito
This recipe isn't originally Vegan. I found it in an old Vegetarian recipe book that I had laying around. And, am I glad that I found it! I was craving something creamy and spicy at the same time. But don't worry if you don't like it spicy, because you can leave the hot sauce out of the dish if you want.

It's super easy and great for entertaining. It can be made ahead of time so you can make it into a healthy lunch the next day.

The flavor is very mild and you can substitute the Cannellini for any type of white bean you have on hand. Sure, you can use any bean you want, but white looks so pretty against the carrot and the flavor is milder than darker colored beans.

Step 1Ingredients

Ingredients
This recipe serves 4 people (8 burritos)


-1 large Onion
-3 cloves of Garlic
-2 Carrots
-1 cup Cannellini Bean
-3 tbsp Vegan Cream Cheese
-3 tbsp Water
-2 tbsp Oil
-Salt and Pepper taste


You'll need at least 8 Flour Tortillas to serve.
