Introduction: Vegan Vanilla Cupcakes

Step 1: Gathering Ingredients

Ingredients:
1 3/4c flour
1c sugar
1tsp baking powder
1/2tsp salt
1c almond milk
1/2c canola oil
2tsp vanilla extract
1tbsp apple cider vinegar

Step 2:

Line a cupcake sheet with 12cupcake liners and set the oven to 350.
Take a medium mixing bowl, and sift in: the flour, baking powder and salt. Set this aside.

In a large measuring jug, place the sugar, milk, oil and vinegar. Whisk together.

Bring back your mixing bowl from earlier, and pour the contents of the jug into the bowl,and whisk well, until you have a thick and smooth batter.

Step 3:

Bring back your cupcake sheet and pour about 1tbsp of mixture into each cupcake liner. Place in oven and set timer for 15 mins.
Take them out and insert a cocktail stick into the centre. It should come out 'clean' with very few crumbs around it.
If it comes out with mixture around it, cook for 3 more mins. Do the cocktail stick test again. They should now be done.
