Vegetarian Chili

Its cold out, time to make some quick vegetarian chili.

Step 1: Ingredients

Ingredients:

1 onion
1 green pepper
1 pakage tofu
2 carrots
1 8 oz package baby bellas'
2 14 oz cans of diced tomatoes
1 can red beans
1 can black beans
1 chili seasoning

Optional:
tortillas
cheese

inertia18, THERE IS NOTHING WRONG WITH TOFU its actually very healthy, and is a great source of protein, iron etc.

My nutritionist said that our tofu that we buy pre packaged loses nutrition and ends up with preservatives and other minor ingredients that aren't good for us. Either way, I never liked Tofu. Thanks for the recipe, gonna give it a try this week.

I actually thought the article was pretty well written. I had no feelings about soy one way or the other, and I subsequently did a little research, paying close attention to the authors were and what the small print disclaimers said. It sounds like there's a lot we don't know. Or that someone doesn't want known. If you've driven across the midwest, you know that soybeans, along with #2 corn, is most of what is being grown in the heartland. There's huge amounts of $$ being made, and I'm guessing it's not by the farmers. I'm not telling you what to think, just urging you to look at evidence critically, and make up your own mind about what you put in your body and who you give your money to. :)

wicked instructable, just made some and its wicked, being a UKer (or my local shop being rubbish) i couldn't find red and black beans, so used kidney beans as an alternative, and it was wicked, and using smoked marinated tofu too was good cheers for a great recipe!

One good trick when cooking tofu, especially when you want a meaty texture, is freezing it. I usually pop extra firm tofu in the freezer right when I bring it home from the store. Take it out once it's solid and defrost it then use it as usual. In this recipe I would expect the frozen tofu to soak up the sauce even better. I'm going to give it a try.

I've been wanting to try my hand at vegetarian chili for a while now as the premade ones tend to cause my body to protest! I'll have to give it a try... nice to see you shop at Whole Foods, too.
