Don't feel left as the vegetarian at a BBQ or settle for the plain veggie burger that is sometimes available. These kabobs are spicy, super-fruity and perfect for a summer evening.

Fruits and Veggies to Skewer
Pineapple
Peppers
Tomatoes
Onions

Fake Meat
Gardein Beefless Tips
 
Marinade
2 cups coconut water
1/2 cup coconut milk
3 Tbs lime juice
2 Tbs soy sauce
1 Tbs rice vinegar
1 Tbs agave
1 tsp chili powder
1/2 tsp cumin
1/4 tsp pepper
3 cloves garlic, minced
1" piece of fresh ginger, minced

Directions
  1. Chop up fruits and vegetables into about 1" pieces
  2. Mix all marinade ingredients in a bowl
  3. Add fruits, veggies and meat substitute
  4. Cover with plastic wrap and leave in the fridge overnight
  5. Skewer and grill for about 15 minutes
  6. Sprinkle with toasted coconut
  7. Serve with rice
Make up a batch ahead of time and bring them to the next cookout!


Yea my daughter wanted to enter something like yours in this contest but unable to get things done in time....she had me vote for yours by the way were can you get the mock meat....I have never seen it before? Have you seen my sons recipe its Chef d* Yoyo*s Bar Be Q sauce my daughter eats it with cheese and potatoes and any veggies she can get,,,lol, <br><br> She almost eats no meat at all...think its cause I was a vegan then a vegetarian when I had her and till she was five...

Also I notice you use Agave syrup just wondering how that is....As I am a diabetic how does that place in the controlled by sugar department...I know that rice syrup doesn't raise blood sugar that much so was wondering how this is....any idea?
I'd certainly do more research, but from what I've gathered is it a better option (although I think that as it has become more popular there are versions of it that are not as good as the organic and thus, more expensive, brands). The gylcemic index is lower than sugar, but I don't know if it is as low as rice syrup. It is also sweeter, so you can use less...that could make it better even if all other things are equal. <br><br>I assume the less refined the better (for any food). But you were vegan, so you've probably got all that already!<br><br>Maybe your next Instructable can cover some of this : )<br><br>
Actually maybe I will get some and test it out...by the way, how does it taste, is it as sweet as maple syrup, which it is bottled like, or is it more like the sweet you get with stevia or stivia?
