Introduction: Walnut & Brown Sugar Oatmeal Cookies

These have to be the yummiest Oatmeal Cookies I have ever had!

The Brown Sugar gives these cookies such an earthy country flavor, that's impossible to resist. Even if you think you don't like Oatmeal Cookies, you at least have to give these a try. They are sweet, plus the crunch of the walnuts is totally unexpected. They're not gooey, they're crunchy, perfect with a glass of your favorite milk.

You don't have to use the two different flours, you can just use whatever you have on hand. But if you use all white flour, the cookies will be paler in color.

These cookies are obviously not Vegan, but you can substitute the egg with an Egg Replacer. What may also work, is add one teaspoon of vinegar plus a tablespoon of water to the mix, instead of the egg.

Step 1: Ingredients


3/4 c Butter
1 c Brown Sugar
1 Egg
1 tsp Vanilla

1/2 c Flour
1/4 c Whole Wheat Flour
1 tsp Baking Soda
1/2 tsp Baking Powder
1 tsp Cinnamon
1/8 tsp Nutmeg (optional)
3 c Oats
1/2 c Walnuts


Step 2: Method

-Cream the butter and sugar together with an electric hand mixer.
-Add the egg and vanilla, and mix well.
-In a separate bowl mix the flour, baking soda, baking powder, cinnamon and nutmeg.
-Add the dry mix to the wet mix.
-When everything is well incorporated, start adding the oats cup by cup. Then add the chopped walnuts.
-Make small balls and press them a little until they are about half an inch thick.
-Bake for 12-15 minutes at 350 degrees.
