Watermelon Done Right: De-Seed Like a Pro

Step 3Second Cut

Second Cut
Spin the watermelon end-for-end and slice off another shallow "bowl". Remember that the green rind, and the white, dense flesh is basically inedible - it's not sweet at all, so try to get a nice, deep red portion of the sweet part included in your bowls.

It's true that the hard green rind is inedible, but you can eat the white flesh -- it just doesn't have any sweet taste. Another option is to pickle the white flesh in some vinegar, spices, and sugar. Pickled watermelon rind is a popular southern dish that results in crunchy and bold flavors. Google some recipes and give them a try. I've made a dill variety and a sweet variety and it's really easy to do.
