Introduction: Watermelon Rind Pickle Salad

This is a sweet & refreshing take on the classic cucumber salad. Looking for a nice salad for a BBQ or just something to use up that jar Watermelon Rind Pickles you made? Here it is!

Hardware:

- Medium bowl

- Whisk or spoon

- Cutting Board

- Knife

Software:

- 1 jar watermelon rind pickles

- 1 English cucumber

- 1 tsp honey

- 1 medium onion

- 2 tbsp sour cream, yoghurt or mayo

- 1 tbsp watermelon rind pickle juice

- 1 tbsp vinegar

- Salt & pepper to taste

Instructions:

In a medium bowl combine vinegar, the juice from the pickles, sour cream and honey. Mix together and taste, adjust flavour with salt and pepper.

Thinly chop onion.

Dice watermelon rind pickles.

Thinly slice cucumber.

Add to dressing and toss to coat. Leave chill in the fridge atleast an hour, to allow flavours to mingle!

Step 1: Keep Calm and MISE EN PLACE!

Gather your ingredients. In this case this involves rummaging around in your fridge and cupboards for:

- 1 jar watermelon rind pickles

- 1 English cucumber

- 1 tsp honey

- 1 medium onion

- 2 tbsp sour cream or yoghurt

- 1 tbsp watermelon rind pickle juice

- 1 tbsp vinegar

- Salt & pepper to taste

Step 2: Make Your Dressing

In a medium bowl combine the vinegar, the juice from the pickles, sour cream and honey.

Mix together and taste, adjust flavour with salt and pepper. This will depend on the brine you used for your pickles-- mine was very sweet so I had to add a decent amount of salt to balance it out. If your pickle brine was more on the vinegar side, you might not need to add the additional vinegar. Just give it a taste and use your own judgement.

Step 3: Choppity Chop

Chop up your watermelon rind pickles into rough cubes. Slice up your cuke. Slice your onions.

Dump them all into your dressing mixture, and stir to coat.

Cover with saran wrap and leave in the fridge for atleast an hour. This salad is best when super chilled, and letting it sit lets the flavours get together and makes it tasty tasty.

Now light up that barbecue so you have a real reason to make this!
