8 oz bittersweet chocolate chips
1/2 cup heavy whipping cream
In a microwave safe glass pyrex measuring cup, mix both ingredients. Microwave on high for 60 seconds. Remove from microwave and stir until completely smooth. The chocolate chips will melt in the warm cream as you stir. Keep stirring until it is shiny and smooth.
Let cool completely (for at least 20-30 minutes). Transfer the ganache to the bowl of your stand mixer. Using the whisk attachment on medium/high speed (8 out of 10 on my Kitchenaid Mixer), whip the ganache for 5 minutes.
Notes: This is delicious....and makes a great topping for many things. It is not super sweet...more of a rich dark chocolate taste. It looks like a cross between pudding and frosting. It tastes amazing!!
