White wine cookies – rollitos de vino blanco are delicious sweet treats! If you haven’t tried them yet, here is your chance! They are easy to make & fast to bake!
So my research for homemade white wine cookies recipe started. I was pleasantly surprised that to make these only a few ingredients are needed. What I did not like was the fact that most Spanish recipes use a lot of oil. And by oil I mean vegetable oil. Now don’t get me wrong, I use oil in baking but those recipes contained waaay to much oil to my liking.

Step 2: Ingredients:
270g (9.5oz) Plain Flour
100g (3.5oz) Caster Sugar
80ml (2.7fl oz) Extra Virgin Olive Oil
80ml (2.7fl oz) White Wine
½ Teaspoon Sea Salt
¼ Teaspoon Baking Powder
5 Tablespoons Icing Sugar
Step 3: Directions:
In a mixing bowl combine all the dry ingredients (except for the icing sugar) and mix. Now add the oil and wine. Combine. Form into dough (this can be done in the mixing bowl or you can knead the dough on you work top).
Roll the dough into a sausage and cut equal size pieces. You should get about 20 pieces. Form these into balls. Using your finger or the end of a wooden spoon, make a hole in the middle of each ball and stretch the hole more.
Place them onto a baking tray lined with baking paper/silicone mat. Bake at 180C/356F for 25 minutes or until the bottoms are golden brown.
Let them cool down a bit before coating them in icing sugar.
Keep in an air-tight container!
