The thicker variety I keep talking about is a bit different in this stage - just let it ooze into the pan. Then you have to find "the zone" for the amount of heat - since the pancakes are thicker they need to cook longer, but too hot and they burn before being ready on the top, and too cool and they come out dry and yucky.
