Not everything Italian is red sauce based. We like a little sorta pesto once in a while to make things more interesting. Like I have said before sometimes you use what is fresh or what is on hand in a real Italian household. This what I used today: (amounts are to taste)
Salt
Pepper
Chives
1 Boiled bell pepper
1 handful Lettuce
Garlic powder
1/4 Onion
Cilantro
Basil
Oregano
2 splash Salad Oil
1 splash Vinegar
1/2 cup or so Peanuts.
Your favorite cheese
optional: green beans

Add everything but the peanuts to a food processor.
Grind to a fine mixture.
Add the peanuts grind mixture a bit more.

Put a touch of butter on some cooked noodles.
Add the sorta pesto.
Add your favorite cheese.

Eat!

Update: I made a new version with boiled spinach and green beans, but I did not pulverize it all. Gosh it was good.

Yet another pesto II:

1 - pinch Salt
2 - pinches Pepper (Pepper is good for digestion)
1 - teaspoon Chives
1 - Boiled bell pepper (minced)
1 - bag Italian green salad
1 - teaspoon Garlic powder or mice 1 to 2 cloves of garlic.
1/4 - Onion (minced)
1 - teaspoon Cilantro
1/2 - cup parsley
1 - teaspoon Basil

1 - teaspoon Oregano
2 - teaspoons  Good olive oil (not extra virgin)
1 - teaspoons Apple cider Vinegar
1/2 cup or so Peanuts (finely grated)
2 - tablespoons Parmesan cheese

Add everything to a food processor.
Grind to a fine mixture.

Put a touch of good olive on some cooked noodles.
Add the sorta pesto and mix.

Mangia!

Optional: Croutons
Toast some sandwich bread.
Mix a bit of butter with some garlic and spread on the toast.
Slice into 1/2 squares or so. Some people even mince the toast into crumbs and cover the dish.

Note: When cheese was sparse, butter infiltrated breadcrumbs were used to simulate cheese.
