Introduction: Yummy Coco-Chocolate Chip Oatmeal Cookies

You want something Yummy, Soft, Gooey, Chocolatey...something you can reach for a 2nd, a 3rd, a 4th and not feel
like you're losing control...try these :)

(I would like to add however that my results are at an altitude of 8000+ft and while they should come out fine at any altitude lower..but if your results come out a little different, try adjusting the amount of baking powder/baking soda.)

Step 1:

Ingredients:

1 tblspn vegetable oil
2 tblspns butter
1/2 brown sugar
1 egg
3 tblspns plain yogurt
2 tsp vanilla
1 cup Oats (i dont like to use instant...i like the slight crunch of the regular oats. but its all according to preferences...)
1/4 tsp baking soda
3/4 cup All-Purpose Flour
1/2 cup chocolate chips
Optional:
1 tblspn coconut milk
1/4 cup shredded coconut

Step 2:

In a medium sized bowl mix butter, sugar, oil and yogurt. Then add egg, vanilla, coconut oil(if using) and salt. Mix.

Step 3:

In another medium sized bowl mix Flour and baking soda. Combine dry flour mix with the other mix. Add Oatmeal, Chocolate and Coconut (if using).

Place by spoonful on baking sheet and baking for 6-10 minuts. Depending on oven and personal preference. I never bake my cookies more than 7 minutes but using a gas oven and living at a high altitude may have something to do with that....

Step 4:

Enjoy!
Served best warm or cool, with a hot cup of coffee or a glass of milk ^_^
