I don't even know how long my aunt has been doing this, but it's always a hit. She sometimes uses yogurt instead, which is equally delicious. Pudding or yogurt pie is always nice on a super hot summer day, especially (unless you're my cousin and the microwave is your best friend). Just be careful where it's put in the freezer, if you like your pie cold. We've had a few pies lost to unsuspecting vegetable retrievers. Here's an example: Me (to self): I can put this pie on the frozen corn because it's flatish and no one is making corn tonight. My aunt: AH! The pie! I was just getting the corn . . . Me: Oops. So . . . We have more pudding, right?

Yum! You could also add a 1/4-teaspoon of mint extract and top with Andes mints for a cool, refreshing variation. Double-yum!!!

Tasty! You could make your own crust from brownie mix --mix according to directions, spread in a pie pan, bake for 5 minutes less than directions call for so it will "fall" when you take it out of the oven.
