This coconut pie is really quick and easy to whip up, though be warned - it's got to cool for a while before you chow down! Probably best to make it in the morning before you decide you NEED coconut pie.

This coconut pie recipe comes from Taste of Home, though I've altered it a teeny bit. The ladies over there truly know a thing or two about pies. Especially coconut ones!

Step 1: Ingredients:

 • 1 cup raw, shredded & unsweetened coconut
 • 1 cup sugar
 • 1 1/2 cups milk
 • 3 tablespoons flour
 • 1 tablespoon butter, melted
 • 2 eggs, beaten
 • 1/2 teaspoon vanilla extract
 • pinch of salt
 • pie crust (cheating today and using a ready made one!)

Probably all things you've got on hand. :D

wonder if you could substitute the milk and vanilla with vanilla almond milk? My roommate is lactose intolerant (though baked goods don't affect him as much) but I know almond milk isn't always a good substitute for "regular" milk. And I've not enough experience with baking to just assume it'd work lol. Might just give it a try and see what happens!

I made this, but forgot to take pictures. I upgraded the crust to a graham cracker crust. It was awesome, thanks.
I topped it with coconut frosting. http://www.instructables.com/id/coconut-oil-frosting/
