Introduction: Crock Pot Chili Con Carne
This is one of my favorite dishes.
My family regularly asks me to make it for them. As it is quite easy to make I don't mind.
I am going to apologize in advance for any mistakes I made writing this, but my native language is dutch. and ofr the potato quality pictures.
Step 1: Ingredients
For this crock pot chili (4 servings) you need :
- Olive oil
- Bell pepper
- 1 big onion
- 1 shallot
- 3 cloves of garlic
- Half a kilo ground beef
- 1 can of chopped tomatoes
- 1 can of red kidney beans
- 1 small can of corn (optional)
- Paprika powder
- cayene pepper (to replace the chili pepper, because someone doesn't like it in her food)
- tomato paste (not displayed)
- A little whisky (not displayed, I used J&B. I like to cook with this one)
Step 2: Onion, Shallot, Garlic, Bell Pepper
Peel and chop the onion and shallot. It doesn't have to be small pieces. Slice oninon rings and then cut that into 4 pieces.
To peel the garlic, remove the top and bottom and roll the cloves between your hands. Crush the cloves.
Cut the bell pepper into small pieces.
Heat some oil and add the onions, shallot, garlic. Stir until the onions get translucent. Add some tomato paste, stir and turn off the heat.
You can already put this in your crock pot.
Step 3: Get the Ground Beef Ready
Flatten the ground beef to ~1cm thick.
Season the meat with some salt, pepper, paprika powder, cayenne pepper and cinnamon.
Heat some oil and add the the meat in chunks, bake until nice brown on both sides. It can still be raw in the middle. Add it to onion/shallot/garlic/bell pepper mix in the crock pot.
Step 4: Add Chopped Tomatoes and Beans
Add the chopped tomatoes and red kidney beans.
Stir it all up, you can break the meat into smaller chunks.
Set the crock pot on low, add a little bit of whisky.
Let it cook for 5-6 hours. Just before serving add the corn (if you like).
Serve with rice!
