A grilled cheese sandwich is the velcro of the sandwich world

Step 1: Why?

why ask why, I made a LOT of chilli and need different ways to make use it up

Step 2: The Chilli

I make a lot of versions of chilli, the one thing they have in common is they are HOT, this one was a pound of ground beef, a pound of ground turkey, browned with a large chopped spanish opnion, 2 bell peppers, a can of fire roasted diced tomates, 5 cloves of chopped garlic, 2 small cans of spicy v8 juice, a jar of pickled jalapeno peppers, a handful of frozen habanero pepper slices and corn masa to thicken

Step 3: Lets Build the Sandwich 1

I used to always use butter when making a grilled cheese because that is how my mom and granma made them, but waiting for the butter to soften (it melts to a puddle if left unrefrigerated) I started using mayonnaise, please note that Miracle Whip or other "salad dressings" won't work.

 smear a layer of mayonnaise on one side of 2 pieces of bread for each sandwich, lay them mayonnaise side together and move to step 2

Step 4: Lets Build the Sandwich 2

lay down a nice layer of cheese, I'm using 3 slices of "american" but a nice grated cheddar or monterey jack would work well

Step 5: Lets Build the Sandwich 3

now a healthy layer of chilli, I also added a couple splashes of a mango/ghost pepper hot sauce my brother made

Step 6: Cooking

in a small frying pan preheated over a medium heat place the sandwich mayonnaise side down and cover with a lid, cook approximately 3 minutes and then check to see if browned to your liking, using a spatula (or if you can't find one your  fingers) flip the sandwich over and cook another 3 minutes

Step 7: Serve It

I had a small bag of american style chips as seen in the picture but I also added several jalapeno stuffed olives and a couple of sweet gerkin pickles along with a nice cold beverage
