Ice cream pie

Ice cream pie is super easy to assemble - and best of all, you can make it in any flavor you like! This time I'm using vanilla ice cream with blueberries and lemon zest, but I really want to do coffee ice cream with nuts and chocolate chips. Or strawberry ice cream with blueberries and bananas. Or chocolate ice cream with peanut butter and coconut. Or vanilla ice cream with pineapples and caramel sauce! Really, the possibilities are endless. :D


Ingredients:
  • 1 pint ice cream - any flavor you like, softened.
  • graham cracker crust (1 1/4 C crushed graham crackers + 1/4 C sugar + 4-5 T melted butter)
  • 1 cup mix ins - whatever you like!
I think that adding a bit of whipped cream or Cool Whip would be amazing, too!
You'll also need an 8x8 pan or a pie pan along with some parchment paper.


Instructions:
  1. Leave the ice cream out on the counter for 10-15 minutes to soften up.
  2. Mix together the melted butter, graham crackers and sugar.
  3. Line the pan with parchment paper and then press the crust into place.
  4. Pop the crust into the freezer while you make the ice cream filling.
  5. Mix the softened ice cream with whatever else you like - if you're using fresh fruit crush it with the spoon a little bit to release some of the juice, :)
  6. If your crust has set up (normally takes 5-10) minutes, pour the ice cream filling on top.
  7. Put back in the freezer for 1-2 hours minimum, or until the ice cream is nice and firm.

To serve, pull the pie out of the pan using the parchment paper and cut it into pieces with a sharp knife. Serve it right away - it gets a little bit messy. :D

I have pretty sensitive teeth.... is the ice cream really cold or does it melt fast?

When you put it back into the freezer at the end do you need to cover it?

If it'll be in there for more than a few hours, I tend to cover it with plastic wrap just so it doesn't absorb any weird flavors. :)
