Introduction: Mango Pie

Mango pie is one of my favorites! It's similar in flavor to a peach pie, but a bit more tart. I add cardamom to my mango pie because the flavors work beautifully together. I also use fresh mangoes in mine - I've never had a mango pie made with mango puree that I've liked - the flavor is never strong enough!

Mango pie is a great use for mangoes that are slightly underripe, too.

Step 1: Ingredients:

  • 2 pie crusts (yes, I am lazy. it's okay!)
  • 4-5 mangoes, sliced thinly (slightly underripe or just soft to the touch is best)
  • 1/4-1/2 cup brown sugar (depends on how sweet your mangoes are!)
  • 1 tsp cardamom
  • 3 T flour
  • 3-4 T butter

You'll be baking the pie at 375 F for 40-50 minutes. I find that this pie turns out best in ceramic or glass pie pans - metal tends to leave the crust too brown.

Step 2: Peel and Slice the Mangoes

Do this however you like - I like to cut off the halves and then slice those. You can even dice the mango - just make sure everything is small and around the same size so it cooks properly. :D

Step 3: Mix the Filling

Add in the brown sugar, flour and cardamom.

Mix everything together until there are no dry pieces of flour floating around. :)

Step 4: Assemble the Bottom Crust

Place the bottom crust in the pie pan and prick it with a fork. Press it firmly into the pan to get rid of any air bubbles.

Once that's done, put in a layer of mangoes and dot it with butter. Then more mangoes and more butter. Keep doing this until you're out of mangoes. :D

Then trim the edge of the bottom crust so it's even with the edge of the pan.

Step 5: Add the Top Crust

Place the top crust on the pie. Fold the excess top crust under the edge of the bottom crust. Press the edges of the crust into place however you like - I prefer the lazy fork method. :D

Cut a couple slits in the top crust to help release excess steam. Otherwise your top crust might rupture.

Step 6: Bake!

Bake at 375 F for 40-50 minutes, or until your crust is looking nice and golden brown. You should be able to smell it when it's done - the mangoes will be really fragrant and the crust will smell nutty and buttery. :)

Tip: if you'd like a browner crust, beat an egg and brush a little of it onto the crust. (Just don't do it around the edges or they'll get too brown!) I like to sprinkle a little sugar on top too.

Step 7: Serve!

Let the pie cool for at least an hour before digging in if you want the slices to come out nicely. If it's too hot it will fall apart. :)
