-Mixed vegetable curry is a combo of variety of veggies. It is very nutritious and healthy.Dish is colorful and tempting to eat.

Ingredients required:

Any vegetable oil

veggies of your choice:

- I used diced carrot,potato,beans,cauliflower,capsicum.

-Finely sliced tomatoes.

spices required:

-red chilli powder

-turmeric powder

-coriander powder

-salt

Ingredients for grinding to make a curry paste:

-2tbsp roasted peanuts

-2tbsp sesame seeds

-1/4 cup desiccated coconut

-1 large sliced onion

Step 1: Method of Preparing Spice Paste:

-Before starting curry preparation first we prepare spice paste.

-Take a blender and add all the ingredients listed to grind(peanuts,sesame seeds,dessicated coconut,sliced onion)

-Blend all ingredients with little water to make a paste.

Step 2: Curry Preparation:

-Take a vessel and add few tablespoons of oil.when the oil is heated add cumin seeds(optional)

-Add diced veggies to it and cook by closing the lid for some time.

-when veggies are half cooked add finely sliced tomatoes and capsicum pieces.

Step 3: Adding Spices:

- Now its time to add curry paste and all spices.

-After adding curry paste add red chilli powder,coriander and turmeric powder.

-Add salt.Give a mix ,close the lid and cook for some time until all spices are properly blended with curry paste to give a nice flavour.

-U can serve this with hot steamed rice or tortillas,naans,bread.

-U can squeeze lemon juice to get an extra tangy taste.
