you will need:about 8 jalapenó peppers
a mason jar with both lid pieces
and about 2 cups of vinegar(apple cider works best but you can substitute white)per jar

I did something similar with Habanero chiles and Grain Alcohol. I just cut the peppers in half and tossed them into a jar, and brought the level of Alcohol over the peppers. Good alternative if you don't like the vinegar taste.

Instead of boiling the vinegar you can try adding it at room temp, instead of storing for a week you have to store it for three months thats the biggest downside. I usually just pierce a few hole in the chillies with a fork and place them in a jar whole. My dad and myself have done it that way successfully with habanero, scoth bonnets, birds eyes and various other chillies. Some chillies get a little soft but are still fine.
