Spicy southern coleslaw

This is a coleslaw recipe I came up with to go with some pulled pork sliders I made. :) I'm not a huge fan of coleslaw, but the boy is and it got the seal of approval so here it is for all the internets to see.

Feel free to shred your own cabbage - my food processor broke, so I took the lazy route and got a bagged coleslaw mix.

Ingredients:
  • 1 bag coleslaw salad mix (or one shredded head cabbage, or a mix of cabbages, onions and carrots)
  • 1 cup mayo
  • 1 1/2 tablespoons vinegar
  • 1 tablespoon water
  • 1 tablespoon sugar
  • 1/4-1/2 tsp Tony's seasoning (Creole seasoning - spicy and salty!)
  • black pepper to taste
  • a few good pinches of celery seed
Directions:
  1. Mix together all the dressing ingredients in a small bowl until they're nice and smooth. At this point it's good to taste and see if you'd like to fiddle with it a bit.
  2. Pour over cabbage mix and mix like crazy until everything is nicely coated!
  3. Chill! Overnight for best results, but a couple hours in the fridge will do, too! It's always better after all the flavors have mixed a bit. :)
Keep in mind that the salt will pull liquid out of the cabbage/carrots/onions/etc, so it will become a little more runny over time. I wanted to keep it more creamy, so I tried to limit the liquid that went in up front. :D

I think this sounds wonderful for a BBQ or guests. I have not made it yet. I tolerate mayo if I am a guest, but I prefer to use Dannon's Plain Yogurt to make mine. I don't like a lot of salt either. But I sure will try this when I get a chance.

Actually, my favorite way to make a dressing for coleslaw is to use Orange Pineapple Juice Concentrate (the frozen stuff) and add a little yogurt or mayo to it and you can thin it a bit with cold water to your taste. This is especially good with any Terriyaki flavored meat or meal. Try it, it is easy and healthy too.

And yes, my food processor broke a few months ago and I miss it terribly. Then too, for my coleslaw ...... I like mine sliced and then cut in half.....makes you work to eat it.... burn those calories (grin, just joking on the calorie burn).

And I NEVER add raw onions to anything, just the way I was taught growing up..... lol. I am saving this for guests and will try it.
