Introduction: The {BEST} Banana Pudding

SO...why banana pudding for fathers day?!

Well first of, my dad LOVES banana pudding. I know not all guy's like banana pudding, but this one does anyway and that's what counts. Make what YOUR dad likes, or loves :)

So here's the recipe for you!

I tripled it so i would have 5 quarts because i have lotsa siblings that like this also :)
But for you, just in case you don't want to make a bunch i will give you the recipe that makes 2 1/2 quarts.

Ingredients:

60 - 70 Vanilla Wafers
1 cup white sugar
3 tablespoons cornstarch
1/4 teaspoon salt
2 (12-ounce) cans evaporated milk
3 large egg yolks, lightly beaten
3 tablespoons butter, cut into pieces
1 1/2 teaspoons vanilla
4 bananas (or however many you want)


Step 1:

Line bottom and sides of your 2 1/2 quart glass bowl with wafers. (the bowl i used was a little to straight so i couldn't get the wafers to stay on the sides, :-/ )

Step 2:

Combine sugar, cornstarch, and salt in a medium saucepan. Gradually stir in evaporated milk to dissolve cornstarch.

Step 3:

Whisk in egg yolks. Add butter. Cook over medium heat and stir, stir, stir, until mixture begins to thicken.

Step 4:

Reduce heat to low, bring to simmer and cool for 1 minute, stirring constantly. Remove from heat and stir in vanilla extract. Let cool slightly.

Step 5:

Cut one banana into bottom of bowl. Pour some of pudding on top. Then add wafers.
Just layer these three things until pudding is gone.

Step 6:

For the top, crush some vanilla wafers in bag with rolling pin (or whatever works to crush them).

Step 7:

Pour your crushed wafers on pudding and.....there is your Banana pudding!!
You can eat it warm, but its best cold, and its thicker so it really depends what temperature you like.
