I'd say it would work with a guitar amp. You would just adjust the dial on the sound sensor to be less sensitive. The arduino code doesn't have anything to do with the sensitivity of the sensor. As for your other question, you use the breadboard to connect different pieces of electronics. It isn't necessary if you want to solder everything together, but it simplifies things and makes it very easy to change things around.
