    I have an even easier way to make a probiotic "yogurt" that involves no heating at all-- just room temperature. I simply pour cold milk from the refrigerator right into a small glass and then empty the contents of a probiotic capsule into it. I cover the glass with a cloth to keep bugs out and then put it in a location where it won't be bumped or disturbed for at least two days. I usually end up with milk that has separated into curds and whey. I stir it up and then use it up quickly and start over with a new batch. I prefer to use probiotic capsule bacteria rather than the thermophilic yogurt strains because the probiotic ones will thrive at lower temperatures, like the temperature of our bodies.
