This is a great base sauce. In the Nagellini family we add oregano and parsley to mix it up occasionally. Reduce it down and it makes a great pizza sauce too. Ciao.
I've used a similar method for years. It works. Works so well that I use it every other year now. Try it, you'll be impressed by the number of these pests you'll dispense of.

I do this with hazelnuts or walnuts but I add a tbsp. of walnut oil, then salt to taste.
I add several small quartered tomatoes and finely chopped fresh herbs of basil, oregano and thyme to taste. This will lessen the amount of dressing you add to the dish due to the added taste.
To truly make good/excellent Mac N Cheese the last step is to bake it. Authentic Mac N Cheese has a crispy crunchy crust and that's the final word.
