Yes, the Chickpea juice has wonderful binding qualities. There are even facebook pages devoted to this wonderful juice (search Facebook for Aquafaba ) . You can use it in everything - baking etc. Even Meringue (I haven't tried that yet):-)By the way - my Stuffed peppers came out SO GREAT!!! I used the extra filling to make a meatloaf. I did grind up and add the actual chickpeas to the filling, then baked in a loaf pan - topped with Ketchup and bbq sauce - Also delicious - especially last night for a meatloaf sandwich with mustard and onions.

I can't wait to try these!!! I am vegan, but can easily modify this recipe by using Vegan cheese ( I love Daiya Motzerella shreds) and instead of the egg, I'll use 3 T. of the juice from a can of Garbonzo beans (chickpeas). Did you know you can use that juice as a substitute for eggs when baking? A-n-y-w-a-y this looks delicious! Thank you for sharing!!!
