Would it be sufficient to use 3 keystones and have the middle (Red) keystone as the sole sniffing jack? I want to be able to see outgoing and incoming traffic and I should be able to do that with one jack. I was thinking about keeping the schematic the same and use two capacitors but on one jack. I am no electrical engineer so I am not sure If this is plauseable or not.

You are certainly entitled to your opinion. Nothing will change. About had it with naysayers on instructables. One of the reasons I have not renewed my membership. By the way, I started with Slackware back in the 1990's.
Personally I thought the policy of instructables was not to be nasty. Just because you do not see it does not mean it is not valid. Sure hope no one poops on your instructables.
