I use an immersion blender. I put all ingredients (including the oil) into a mason jar and stick the immersion blender in and give it a whirl. Move the blender up and down a couple time to incorporate all ingredients. It only takes 60 seconds and it makes great mayonnaise every time! Place your mayo in the fridge for an hour to thicken up. It's thick when you mix it but it gets even thicker once it is refridgerated for an hour.

Hi I love the instructable! I was just wondering if you could cook the cherries the day ahead to get them to release all their flavor and then allow them to cool then strain?
This sounds amazing! Just wondering if you could sub cocoa butter for the coconut oil and maybe the fudge wouldn't melt so easily? It would make it more chocolaty too. I will have to try it
