Actually Americans have kept with old English much better than the rest of Western society and also wrote the first English dictionary. Surprising, isn't it?
I'm not familiar with the English or History of Canada, so I'm sorry but I can't answer your question there. English over all is basically the same, but little things like how England would spell axe, the thing you chop would down with, would be spelled ax in America, as it did when European sailed there.
