Very helpful to get started and get sensible results from this sensor, thanks! Side note for using it as a white line sensor - it is wildly sensitive to ambient IR light (emitted by lightbulbs and warm colored LEDs). To get a marked difference between black and white, you have to completely isolate the sensor from ambient light.BTW your schematic has the diode symbol in reverse - the pinout is right, but from looking a the picture you get the impression you connected the diode in reverse.
