Sous vide only affects the cooking time and temperature for a given sausage recipe. An option is to try my recipe or any other recipe and then fry a small piece of the meat mixture in a fry pan. If the taste is not to your liking you could adjust it until you like the flavor and then proceed with the curing, stuffing the casing and cooking via sous vide, baking, smoking etc.
