I made this for a friend's birthday yesterday and it was a total success. I doubled the recipe, used leftover coffee instead of water and baked in a large tin for around 45 mins. I had to cover with foil to stop it burning for the final 15 mins but it was perfectly cooked all the way through with a great cakey texture. Fantastic recipe that no one could believe was vegan.
