Made it in my food mixer with a dough hook using slightly over hand hot water. The dough is soft and smooth after 5 minutes mixing. Allowed it to rest for about an hour in the fridge. Ran it through my pasta machine on the thickest setting 10 times and wow!!! Who needs eggs?? But I multiplied all the ingredients by 10 'cos here in ITALY we eat a lot of pasta.
