I studied a good bit of chemistry back in college... Now, I did not do anything with gelatin, but we did have labs where things had to set at room temperature SLOWLY because freezing or rapid cooling in a fridge would "shock" the substance and make it fragile or susceptible to quick degradation. I'm thinking that the previous commenter had a poor result because they put it in the fridge. Try letting it set at room temperature for 24 hours and you may have more desirable results.
