Great Instructable! I've been cooking Dutch Oven for years, and actually made several cobblers just two weeks ago. There are a lot of different variations, and most of them taste amazing. My family typical uses a spiced cake mix on our apple cobbler, and we feel it's plenty sweet without the extra sugar. We also typically pour a can of 7up on top of the cake mix, this makes it really fluffy. That or dollops of butter on top to make the crust more crunchy. I'll have to add some brown sugar to mine next time and try the difference. Ruhbarb cobbler with vanilla ice cream is by far my favorite though, the perfect balance of sweet and sour.
