    No, the beet version was hand-sliced and was not wet. I think the onion was very juicy and was the main culprit, but the fennel, carrot, and cabbage all went through as well and were shredded very finely, so they were also a little wet. Per your advice I only added the salt seconds before sealing, but the first bag pulled out a ton of liquid before I realized what was going on. I added more salt to that since I knew that some had been lost. Then I strained the kraut mixture still waiting to be packed, but it was still very wet. You can dry the top inch of your bag with a paper towel and try again. My FS is about 5 years old, but it is much better about handling wet payloads than my first one was. So if your readers have a really ancient one, they should upgrade. Make sure it has a "moist" setting, the ability to seal on demand with a second button press, and a removable catch-basin for liquids.

    I just tried some, half with beets, half without. Also the food processor (shredder disc) made everything very wet, and that gave the FoodSaver trouble, and I'm sure some of the salt was lost For the second half (with beets), I cut everything by hand and it was much easier to seal them up since the mix was fairly dry.
