Use a torque wrench attached to the handle of the knife, put a bit in it and clamp the bit in a bench vice.Some flats ground on the bit holder would help or a pin through it but I guess this isn't a high torque tool and so does the job well enough without.
I agree about the lack of plotting facilities. I made this https://www.instructables.com/id/Arduino-Developmen...over three years ago to address that issue plus add in a lot of other visualisers which can all be used simultaneously. Still freely available to those who contact me for the link.
Don't slip while screwing. It would be nasty to have that blade run up the inside of your arm. Another one to add to the list of things that can go wrong as a result of....
