You have to use a bridge rectifier (four diodes) to convert A.C to D.C then you would typically run that through a capacitor to smooth out the bumps and get constant D.C.
On virtually all A.C motors it is impossible to use them as generators as they don't have any permanent magnets (they induce a field it the rotor - on brushless ones) only AC Synchronous motors would work and they are quite rare.
