You absolutely could! I've also thought about cutting out more of the metal in the handle, taking the time to round off the edges, and make a "skeletal" handle. The great thing about making your own knife is that you can customize it to be exactly the way you want ;)
My saw insert isn't as nice of a shape but, I did make a replacement for it and I can't recommend doing this enough. Makes a HUGE difference when trying to cut small pieces. Thanks!

Not the exact same thing but, I used your design for inspiration and worked in wood ;)
Wonderful instructable! The best part? You used basic tools that most wood workers have access to! It makes me crazy when I see Instructables that I'd love to make only to find that they require 3D printers and CNC machines!
I took a slightly different approach to organizing my desk but, I'm bad at remembering to take process pictures : /
