Don't know if you have jumped into this yet, but dimming LEDs isn't as easy as just adding a dimmer switch. LEDs aren't actually "on" all the time, most just have a frequency that they "flash" at that is faster than your eye can see. A traditional dimmer switch you buy from a hardware store will just cut power in order to create dimming in a traditional incandescent bulb, but will cause noticeable flickering in LEDs. Its not impossible to do, it just requires a more complicated circuit to allow for dimming. There are instrucatables that cover how to make them if you search. Dimmable LED bulbs that you can buy already have that circuit built into them.As for wiring in place of your florescent bulbs, you would have to wire the power supply you are using to power the lights, to your switch. A dimmer at the switch plate again would present an issue, since the power supply is going to take your 110v AC house current and convert it to 12v DC for the lights. If you were to turn down the dimmer, the power supply would try to maintain the same voltage and amperage to the lights, so instead of getting dimmed light you would probably just get a burnt out power supply. Simple on and off is definitely a possibility though, you would just need to mount the power supply near the lights most likely. It may not be something that is exactly code in a kitchen though, unless you find a power supply rated for those conditions. Hope that helps you get headed in the right direction.
