I pre cut, score and attach double sided tape so the actual construction doesnt take that long, max two hours. This is a picture of one i made with a vintage map of Canada. I am having some trouble keeping the antlers up though. At the moment i have it laying flat until I figure out a good way to reinforce.

YES, I have actually built three deer. The first one i made out of simple printer paper and that didnt hold up well when i covered it in modge podge. The blue one above I gave as a gift, and I made a cardstock white one. I am now a little hooked on papercrafts and yesterday created and assembled my own pepakura giraffe.
